Sunday: Mexican stuffed shells (I do not top with crushed chips, it’s just as yummy without), dirty rice
Monday: Italian beef sandwiches in crockpot (cook chip beef in crockpot with a chopped onion, green pepper and italian seasoning ~ eat on sandwich buns with banana peppers and provolone), broccoli
Tuesday: Spicy Beef Stew from Nourishing Traditions cookbook, quinoa, pan fried, buttery carrots
Wednesday: pesto crusted salmon, green beans
Thursday: Alton’s meatloaf (I sub whole wheat breadcrumbs for the croutons), mashed potatoes (leftover from Thanksgiving and frozen), peas
Friday: roast chicken, cranberry sauce, veg
Saturday: sausage, maybe homemade noodles with butter, veg?

Other:
Yogurt with the yogurt starter I bought a while ago. Every batch of yogurt I’ve tried to make the “traditional” way (using store bought yogurt) has not set
cook garbanzo beans in crockpot for future hummus batches
start a batch of home-cured corned beef using recipe in Nourishing Traditions
oatmeal chocolate chip cookies
homemade whole wheat crackers
lots of green smoothies in the vitamix for lunches
healthy mint chocolate chip ice cream (made with bananas and spinach!)

Tuesday: curried beef and potatoes with peas
*make beef stock in crockpot and french bread
Wednesday: french onion soup
Thursday: homemade pasta with parsley and butter ~ I got a pasta roller for Christmas I’m dying to try out! broccoli
Friday: breakfast for dinner- pancakes and eggs
Saturday: cheese steaks

Other/Snacks:
granola bars with coconut, raisins, sunflower seeds and pumpkin seeds
flatbread crackers (I’m thinking of using another herb… maybe oregano?)

Sunday: chicken sausage with butternut squash sauce and spaghetti
Monday: grass fed burgers with cheese, peas, hummus and whole wheat pita
Tuesday: goulash, lima beans, salad with homemade ranch
Wednesday: roast chicken, sweet potatoes (frozen from Thanksgiving), cranberry sauce
Thursday: turkey enchiladas (leftover Thanksgiving turkey), beans
Friday: thin crust pizza with onions and leftover roast chicken
Saturday: Venison stroganoff (made with venison roast leftovers in freezer), roast carrots

Other/snacks/breakfasts:
applesauce steel cut oats in crockpot
homemade yogurt
beef stock (making a batch in crockpot)

Starting to add a bit of our lunch menu this week. I am horrible at planning lunches…

Sunday:
Lunch: homemade bagels, yogurt cheese plus smoked salmon for me
Dinner: take out pizza (Jason’s request)

Monday:
Lunch: homemade cashew butter and grape jelly sandwiches on whole wheat, crackers, clementines
Dinner: spaghetti, roasted squash, broccoli

Tuesday:
Lunch: leftovers
Dinner: turkey pot pie with leftover Thanksgiving turkey (frozen)

Wednesday-Saturday: in Ohio

Thursday: sesame noodles, steamed broccoli
Friday: homemade pizza
Saturday: holy haluski

Tuesday: Penne Pasta with homemade tomato sauce , roasted beets, roasted garlic bread
Wednesday: Pork steaks cooked in crockpot with jalapeno jelly, creamed corn from the freezer
Thursday: salmon cakes, broccoli
Friday: (Jason out of town) curried lentils and sweet potatoes

*Make bagels and yogurt cheese
Saturday:
Grandma and Papa here ~ salisbury steak, baked potatoes, peas

We’re thankful for a friend who gave us a few pounds of venison meat ~ we’re finishing it up this week! It was perfect timing as our grass fed beef from the 1/4 cow and our local pork from our 1/4 pig we had purchased last fall and in the spring is all gone. Our new beef is ordered from the farm, but isn’t ready yet. It just arrived! I may be reworking the menu a bit.

Sunday: eggplant parmesan (last of the garden eggplant) ~adding a bottom layer of homemade ricotta, fettuccini

Monday: Tacos/burritos, black beans (from the freezer)
*make buns for tomorrow night’s dinner

Tuesday: Sloppy joes, homemade buns, oven baked delicata fries

Wednesday: Tomato soup (from freezer) and grilled cheese (spicing my grilled cheese up with jalapeno jelly)

Thursday: Slow Cooker Apple Scented Venison Roast, homemade creamed corn (from freezer)

Friday: Homemade pizza with roasted garlic, onions and venison sausage

Saturday: Beef stir fry with thai curry sauce (need to find a recipe), red peppers and broccoli over brown rice

Other:
Steel cut oatmeal with pumpkin in the crockpot
Roasted acorn and delicata squash seeds

Sunday: homemade pizza with anchovies

Monday: (Jason out of town) Squash and Saffron Risotto (subbing acorn squash for the butternut, and I’m mashing and mixing it in), side of peas for the girls

Tuesday: shepherd’s pie made with venison

Wednesday: roast in the crockpot with potatoes, carrots

Thursday: roast chicken, roasted summer squash (thanks to the warm weather, we have a few still coming in!)

Friday: homemade pizza topped with leftover chicken

Saturday: salmon, broccoli

Other:
Cookie Dough Hummus ~ awesome recipe!
homemade yogurt (my crockpot batch was very thin)
